Asparagus, Cheddar, Dill & Pickled Chilli Frittata

Flavour, when used intuitively and cleverly, should knock you out, keep you coming back for more and leave you with memories that make your mouth water. This frittata is the perfect example of this. Each ingredient is used in abundance, each one complimenting the other. If you don’t already have a jar of pickled green chillies in your fridge, put them on your next shopping list. There are few recipes they won't enhance. Using a good quality cheddar here will make all the difference. If you think it looks like there's too much dill - fear not. In my opinion there's rarely enough and its delicious flavour is speckled through every mouthful. The beauty of the JJ non-stick ceramic pan comes into focus here, creating the most beautiful crust to the frittata which simply slips out the pan to serve.

Method⁠:

  1. Turn your grill on to its highest setting. Place the JJ non-stick 24cm frying pan on a medium heat and saute the onions in the olive oil for 3-4 minutes, until softened.
  2. Add the asparagus and cook for 3-4 minutes longer, stirring occasionally. The asparagus should be softened, but still retaining some bite. Add the garlic and cook for 1 minute more.
  3. Pour in the eggs, add the cheese, dill, pickled green chillies and season generously with salt and pepper. Stir to distribute the ingredients evenly and cook for 4 minutes.
  4. Place the pan under the grill for 3-4 minutes, or until the frittata is set. Transfer to a plate and serve on its own, or with a green salad. The frittata is also delicious cold and will keep for up to 2 days in the fridge.

2 bunches of asparagus, finely sliced (250g roughly)

1 garlic clove, peeled and finely chopped

6 eggs, whisked

150g cheddar cheese, grated

25g dill, finely chopped

6 pickled green chillies, finely chopped
